I have a mild addiction to junk food. Cookies are also particularly comforting because my husband makes me batches of cookies and ships them to me. It's our way of staying connected since that was something we used to do together that we obviously can't now.
The twist is that I also like to remain reasonably healthy. If this seems like something you share in common, then you will want this recipe!
(I am aware of the highly unlikely fact that anyone will be visiting this page but if you DO stumble onto this page and if you DO love to bake, you are in luck!)
Vegan Chocolate Cookies
1/2 cup all purpose flour (I may substitute for almond flour)
1 small avocado
4 tbsp. applesauce
1/2 cup agave nectar
1/2 tsp. salt
1 tsp. baking powder
1 tsp. cornstarch (can't help it)
Chocolate chips
1 1/2 scoops protein powder (not necessary)
*Mix the avocado up really well so there are no clumps!
Bake at 375 for 10-12 mins.
Now, I have never personally made these but I know someone who has and they don't look the best, but they are amazing! I couldn't get enough! And I didn't feel half as guilty and I didn't feel nearly as lethargic as I normally do after eating cookies. I wish I had pictures.
It basically looks like a heap of chocolate.
I'm trying to get away from things like flour permanently and making the switch over to almond-based products but it has been slow. I cut out milk {except for my fro-yo because, lets face it, I can't stop} and provolone cheese on my sandwich and switched to almond milk for things that call for milk, but the flour problem is a little bit more tedious. I will eventually get there.
